We've been eating pretty healthy lately, which is a very good thing! However, over Spring Break, my boys asked me one night if we could PLEASE have pizza. (We took a few years to perfect our homemade pizza recipe - I'll share that soon!) I told them yes- of course we could have pizza. I had already planned to have zucchini pizzas, and I figured that making a quick crust for them would be no big deal.
Well - I figured wrong! With a husband that was in Europe for 2 weeks, and 6 kids home full time (which was actually really fun), I was SO worn out by the time dinner rolled around. Maybe I could pass of the zucchinis as pizza?!
Ha! They weren't going for it.
Then it hit me. I had some tortillas in the fridge. I toasted them with a little butter and garlic salt in a pan, threw some pizza sauce, mozzarella and pepperoni in the middle, stuck another on top, and the pizza quesadilla was born. They loved it.
